indonesian mixed vegetables and spiced in coconut milk soup ( sayur lodeh )

one of my favourite vegetables , the preparation can take few effort but it’s so simple to cook and taste wonderful. have this with ‘ ayam goreng ungkep, ikan asin and sambal terasi ‘ then you’ll be spend your time all day on your dinning table !
if you wondering , what the hell is kencur ? It is from galangal family but it has a unique , camphor – like and the other name is called : kaemeria galanga. oh well, you can pronounce this on the shop would you? anyway , all shop know kencur and they sell this fresh or in powder , but if you can’t find this one , it’s not the end of the world , your lodeh still taste great .

bahan – bahan :
150 gram kacang panjang, potong @ 3 cm
1 buah terong, belah 2, potong-potong
5 cabai campur ( merah dan hijau ) belah 2
santan kental
santan cair ( sedikit santan dengan air rebusan )
1-2 lembar daun salam
2 cm lengkuas, memarkan
wortel kupas iris iris
kol potong potong
jagung baby corn potong potong
garam dan gula sesuai selera
Resep Bumbu Halus Sayur Lodeh :

2 buah cabai merah
3 siung bawang putih
7 buah bawang merah
1/2 sendok teh terasi di bakar
1 sendok teh ketumbar, sangrai
1 sendok teh kencur cincang kalau ada
Cara Membuat Sayur Lodeh :

Dengan api sedang sambil sesekali diaduk, rebus air dan masukan bumbu halus, daun salam, dan lengkuas dengan santan cair sampai lunak.
Masukkan sisa bahan termasuk sayuran dan santan kental dan sambil dicicipi tambahkan dengan garam dan gula, kecilkan api.
Masak sambil tetap diaduk sampai semuanya matang.

ingredients :
150 g fine green beans chopped @ 3 cm
1 aubergine divide 2 and chopped
5 mix chillies ( green and red ) chopped into 2 pieces
400 g thick coconut milk
100 g thin cocnut milk ( mix wth water )
1-2 bay leaves
2 cm galangal crushed
carrots , peeled and sliced
some white cabbage leaves ( chopped )
baby corn chopped
sugar and salt

ground paste :

2 red chillies
3 cloves garlics
5 shallots
1/2 tsp belacan or shrimp paste ( toasted )
1 ground corriander ( dry fried )
1 tsp ” kencur ” if available

how to make :

wth medium heat boil the water then add some teaspoons of coconut milk then add the ground paste, bay leaves, galangal and boiled till all the ingredients are soften and fragrant , then you can put the rest inggredients incl the veggies and thick coconut milk , seasoning with salt and sugar and cook till all cooked .
