Vegetable and cellophane noodle spring rolls ( lumpia sayur dan soun )

Indonesian spring rolls are my favourite , normally when you eat spring, rolls you always have them with sweet chilli sauce ,not with this one ! this peanut sambal is totally blend very well with the filling ingredients , I didn’t write how to roll the skin , sorry, but you can see behind the packages or YouTube x anyway happy cooking and eating x

Bahan – bahan :
Isian :
4 siung bawang merah iris tips
4 siung bawang putih iris tips
1 sdt kunyit bubuk
Garam dan gula dan Merica
50 g soun secukupnya ( diseduh air panas selama 3 menit dan tiriskan lalu gunting kecil-kecil)
3 buah wortel potong
Kecil – kecil
50 g buncis potong kecil kecil
50 g kacang polong

kulit lumpia secukupnya
Minyak sayur

Sambal kacang :
150 g kacang di goreng dan kulit nya di buang
5 buah cabe rawit
Air secukupnya
1/2 sdt Cuka atau 1 sdt Perasan jeruk limau

Cara membuat:

Isian:
Panas kan Minyak dan Tumis bawang merah dan putih Hingga harum, masukan kunyit bubuk dan aduk rata kemudian sayuran, aduk merata dan masukan soun aduk merata sambil di cicipi tambahkan garam . Gula dan Merica, setelah matang sisihkan dan biar kan dingin
Sementara untuk sambel kacang:
Haluskan kacang goreng dan cabe rawit dan tambahkan air sedikit demi sedikit hingga lalu sambil dicicipi tambahkan garam dan gula pasir dan beri sedikit Cuka atau air jeruk limau kemudian aduk merata
Langkah terakhir adalah roll lumpia dengan kulit lumpia dan goreng hingga matang . dan sajikan dengan sambal kacang tadi

Ingredients :
4 cloves shallots sliced thinly
4 cloves garlics sliced thinly
1 tsp ground turmeric
Salt, sugar and white pepper
50 g cellophane noodles ( soaked with hot water for 3 minutes then cut with scissor )
3 carrots chopped little cubes
50 g fine green beans chopped small size
50 g peas

Spring rolls skins
Vegetable oil

Peanut dipping :
150 g peanut ( fried and take the skin off )
5 bird chillies
Cooked water
1/2 tsp citric acid atau 1 tsp lime juice

How to make :
Heat the oil and sauté the shallots and garlics till fragrant then put the turmeric then stir well and put all the mix vegetables and stir then add the noodles and stir well , seasoning wih salt and sugar and white pepper , keep stir and when it’s cooked leave it till cool,
Making peanut dipping:
pound all the nuts and chillies till become paste then add water bit by bit and seasoning with salt and sugar and also add citric acid or lime
Juice then stir well
The last step you can start roll the skin spring rolls and making them then fry till all cook and serve with peanut dipping
