Soto ayam ( Indonesian special chicken soup )

looks very loooong and winding road recipe but it’s just so simple and tasty !
One of the best well known Indonesian food !
Oh, I use free range for Chicken and egg and it’s even tastier x

Indonesian
Bahan – bahan :

Bumbu halus :
1 sdm kunyit Bubuk atau 1 ruas jari telunjuk
5 siung bawang merah
4 siung bawang Putih
1/4 sdt Merica Bubuk
1 sdt garam

1 batang sereh di keprek
1 cm lengkuas di keprek
2 lembar daun Salam

Tambahan:
4 atau 5 paha ayam kampung
4 daun bawang cincang halus
Kecap manis secukupnya
Soun di seduh hingga matang secukupnya
Kol iris tipis secukupnya
Bawang goreng secukupnya
4 telur ayam rebus belah 4
150 gr keripik kentang goreng
1 atau 2 tomat potong kotak – kotak
1 jeruk nipis di belah 4
Air untuk kaldu
Minyak goreng secukupnya

Sambal soto :
4 cabe merah besar di rebus
6 cabe rawit di rebus
1 siung bawang Putih sangrai
2 kemiri sangrai
Gula , garam secukupnya
1jeruk nipis di ambil airnya

Cara membuat :
Buat kaldu: rebus air di panci dengan air secukupnya dan masukan 2 daun bawang yang di cincang dan sedikit garam hingga mendidih dan masukan paha ayam biar kan hingga matang Sementara ulek atau halus kan semua bumbu halus dan siapkan wajan dan panaskan Minyak untuk menumis bumbu halus hingga harum dan masukan keprek an sereh, lengkuas ,dan daun Salam biar kan 2 menit dan masukan Tumisan ke dalam kaldu dan aduk rata dan cicipi kuahnya , biar kan hingga matang kemudian ayam di pisahkan Dari kaldu untuk di suir suir dan goreng suiran ayam hingga warna kuning kecoklatan

Sementara buat sambal :
Ulek atau halus kan semua bahan kecuali jeruk nipis , lalu setelah bumbu halus beri perasan jeruk nipis dan 1 sdm air kaldu , sisihkan

Siapkan mangkuk saji dan mulai menata hidangan ; pertama soun, Kol, suiran ayam, potongan tomat, potongan jeruk nipis dan siram dengan air kaldu dan taruh potongan telur dan taburi daun bawang dan keripik kentang dan terakhir kecap manis sesuai selera, hidangkan dengan sambal soto

Ingredients :

Spice paste :
1 tbs ground turmeric or 1 index finger size of fresh turmeric
5 cloves shallots
4 cloves garlics
1/4 tsp ground white pepper
1 tsp salt

1 lemon grass crushed
1 cm fresh galangal crushed
2 bay leaves

Additional:
4 or 5 free range chicken drum stick
4 spring onions finely sliced
Sweet soy sauce as you like
Cellophane noodles soaked with hot water until softened and drained
White cabbage finely sliced
Fried shallots
4 hard boiled eggs quartered
150 gr crisp fried potato chips
1 or 2 tomatoes diced
1 lime divide 4
Water to make stock
Vegetable oil

Soto chilli :
4 red chillies boiled
6 bird’s chillies boiled
1 clove garlic fried
2 candle it’s fried
Sugar and salt to taste
I lime and take the juice only

How to make :
Make the stock first :
Boil the chicken I water with bit of salt and half of chopped spring onions and set a side , take the chicke out and slice the meat and then stir fry te chicke. Until is golden brown yellow and set aside
Meanwhile heat the pan and start sauté the spice paste till smells fragrant and add the lemon grass, galangal, and bay leaves and saute till smells fragrant and add to stock and heat the stock to boiling ,
preparing the sambal, pound all the ingredients except the lime, when it’s finished you can add 1 tsb water from the stock and lime juice

Now you can start the preparation:
Get your bowl , and start putting the noodles, white cabbage, chicken, tomatoes, and lime,and pour it all with your stock and adding sprinkled dried shallots, potato crisp, spring onions, and egg on top and the you can put the soy sauce as you like , serve it hot with your sambal ,
