Siumay Bandung Komplet

one of my favourite street food in Indonesia ! I always remember when I lived with my parents waiting in front of their porch then calling “tukang somay” nearly every night !
In Indonesia they are selling somay with their bicycle and normally they always cycling around the house blocks every night start around 6 pm ! But some of them now have their own stall at some public places , somay from Bandung is the famous one because they are using king fish or we can call ” ikan tenggiri like spanish mackerel” in UK , that fish is very pricy and also it is bit hard to find in every places therefore I mix the chicken , tuna and prawn ,but still using “the tenggiri fish ” for special occasion. Anyway have a try and see which one you are prefer

bahan – bahan :

150 gr daging ayam fillet ( paha )
250 gr udang kupas
250 gr ikan tuna atau ikan tenggiri ( fillet )
2sdm udang rebon di sangrai kering
4 siung bawang merah
4 siung bawang putih
1 sdt merica
1 sdt garam
1 sdt gula pasir
1 sdm kecap asin
2 sdm saus tiram
2 batang daun bawang cincang halus
1 ons tepung tapioca
1 sdm tepung terigu
100 cc air matang
kulit pangsit atau kulit somay
pare di bersihkan dalamnya dan potong 3 bagian
beberapa lembar daun kol
kentang kupas
tahu goreng atau tahu putih di bentuk segitiga

sambal somay :
4 sdm kacang goreng kulitnya di buang
2 kemir di sangrai
1 siung bawang Putih kupas
3 cabe merah dan 4 cabe rawit di kukus
garam dan gula secukupnya
100 ml air matang
1 buah eruk limo
2 lembar daun jeruk

cara mebuat :

kacang goreng, di ulek dengan kemiri, bawang putih, cabe dan garam gula pasir
secukupnya , beri air dan jeruk limo dan daun jeruk masak hingga berminyak
kukus kentang terlebih dahulu selama 15 – 20 menit , sisihkan
kemudian kukus kol setengah matang selama 5 menit agar lentur dan bisa bisa di lipat
lipat
kukus pare setengah matang sekitar 5 menit , sishkan
dan tahu di kukus 5 menit dan setelah itu bagian tengah di lubangi atau di keruk untuk di
isi adonan somay

ayam, udang, dan ikan di blender jadi satu dengan sangrai an udang rebon
sementara bumbu yang dihaluskan : bawang merah , bawang putih, merica, gula pasir ,
garam di ulek hinga halus kemudian di aduk dengan adonan udang dll.
masukan kecap asin, saus tiram dan daun bawang dan masukan tepung tapioca dan air ,
uleni hingga tercampur rata . dan mulailah mengisi pare, tahu dan kulit somay dan
rekatkan kulit somay tersebut dengan cairan tepung terigu . setelah itu kukus selama 15
menit .

English
Ingredients:
150 g chicken thigh fillets
250 g prawn skinless
250 g tuna or Spanish mackerel or kingfish ( fillet )
2 tbs dried baby shrimps
4 cloves shallots
4 cloves garlics
1 tsp white pepper
1 tsp salt
1 tsp sugar
1 tbs soy sauce
2 tbs oyster sauce
2 stalks spring onions
1 ons tapioca flour or corn flour
1 tbs plain flour
100 cc cooked water
Wonton skins
paria and divided into 3 pieces
White cabbages
Potato skinless
Tofu cut triangle

Sauce :
4 tbs peanuts fried and skinless
2 candlenuts dry fried
1 clove garlic
3 red chillies and 4 bird chillies steamed
Salt and sugar
100 ml cooked water
1 lime
2 lime leaves

How to make :
Sauce : pound the peanuts with candlenuts,garlic , chillies and seasoning with salt and sugar then add water and lime water then put the lime
Leaves and cook till the sauce is not oily and set a side ,

Steam potato for 15-20 minutes the set a side then you can put cabbage and paria in your steamer for another 5 minutes then set a side
Later when the filling is ready you can fill the cabbage and the tofu as you like
( for tofu after you steam those , you need to make a hole on their middle to put the filling in )

Somay ” the filling ” :
Blen the chicken, fish, pram all together then mix well with dried baby shrimp then set aside ,
Meanwhile pound the shallots, garlics, seasoning with white pepper, salt and sugar then the pound paste mixing it with your chicken mixture blend it well
Add the soy sauce, oyster and spring onions then mix with the flour and tapioca flour then water , blend and mix well then you can start fill your wontons and Paris and also white cabbage as you like , prepare your steamer and steam those for 15 minutes ,

Kemarin bikin siumay tapi hanya menggunakan ikan tenggiri kurang Lebih 3 – 4 fillet diambil daging nya dan lumatkan , 4 siung bawang Putih di halus kan , 1 sdm udang rebon kering di sangrai , 2 batang daun bawang cincang halus, 1 sdm kecap asin, 2 sdm saus tiram, gula, garam dan Merica secukupnya, 1 butir telur ayam kocok lepas, sedikit air dan tepung tapioca Sambil di liat kekenyalannya , semua di aduk Jadi satu dan bisa di bentuk dengan Juliet siumay atau wonton result : tetep enaaaak
