Jack Fish In Yellow sauce ( ikan pesmol)

bahan – bahan :

ikan kembung di bersihkan
2 sdm kunyit ( bubuk atau 2 ruas kunyit ) ( di bagi 2 untuk marinade ikan dan kuah
pesmol )
cuka atau jeruk nipis
garam dan gula secukupnya
6 siung bawang merah ( ambil 4 siung untuk bumbu dan 2 siung untuk kuah )
1 cm lengkuas
1 cm jahe
4 buah kemiri
minyak sayur
1 sereh di keprek
2 lembar daun salam
cabe rawit jika suka
air matang secukupnya

Tips : Jika menggunakan cuka , campur 1sdt cuka dengan 3 sdm air matang

cara membuat :

1 sdm atau 1 ruas kunyit di haluskan dengan garam kemudian dengan jeruk nipis atau
cuka di jadikan satu dan di balurkan ke ikan bolak balik dan diamkan selama 15 menit
setelah itu goreng hingga ikan matang

bumbu yang di haluskan adalah : 4 siung bawang merah , kemiri, lengkuas, sisa kunyit,
jahe, garam dan gula pasir secukupnya , panaskan minyak dan bumbu yang di haluskan
di tumis hingga harum dan masukan sereh dan daun salam 2 menit . kemudian tuangi
sedikit air dan tunggu hingga mendidih tambahkan air cuka atau air jeruk nipis dan biarkan saus agak asat dan masukkan ikan , cabe rawit dan sisa bawang
merah , cicipi dan aduk rata dan Matikan api

Ingredients :
Jack fish cleaned
2 tbs ground turmeric or index finger size I’d fresh turmer<use for marinate and for the sauce
Citric acid or lime juice
Salt and sugar
6 cloves shallots ( take 4 for the paste and other 2 for the sauce
1 cm fresh galangal
1 cm fresh ginger
4 candle nuts
Vegetable oil
1 long grass ( crushed )
2 bay leaves
Bird chillies
Cooked water

How to make :
1 tbs or 1/5 index finger size of fresh turmeric pounded with salt and mix with jui e from 1 lime juice or mixture of water and citric acid then marinate the fish in to the mixture for a while around 15 minutes . Then you can fry the fish until they brown and cook
set

Pounded paste : 4 cloves shallots , candle nuts, galangal, turmeric, ginger , but salt and sugar then set aside, heat the oil the sauté the paste till fragrant then add lemon grass and bay leaves, and stir well 2 minutes ,pour the water and leave it boil add the mixture of citric acid or lime juice leave until the sauce is thicken then you can put the fish , bird chillies , then other shallots seasoning and stir well and heat off
