Kingfish Soup – Lempa Ikan

bahan – bahan :
2 sdm asam jawa campur dengan 50 ml air hangar
4 siung bawang merah
4 siung bawang putih
1 jari telunjuk kunyit atau 2 – 3 sdt kunyit bubuk
1 ruas lengkuas / laos atau 1 sdt laos bubuk
cabe rawit sesuai selera
1 sdt terasi bakar
1 batang sereh di keprek
2 lembar daun salam
2 buah kemiri
1200 cc air matang
ikan tenggiri secukupnya
beberapa potong buah nanas segar jika suka
garam dan gula pasir secukupnya

cara membuat :
marinate ikan dengan air Asam minimum 15 menit
terasi, bawang merah , bawang putih, kemiri , laos, dan kunyit di ulek halus dengan 1 cabe rawit dan sedikit
garam dan gula pasir sementara didihkan air dan masukkan bumbu halus dan aduk rata
sekalian di masukkan sereh dan daun salam dan nanas. biarkan sampai mendidih lagi ,
baru di masukkan ikan tenggiri, cicipi dan tambahkan gula pasir dan garam bila perlu dan beberapa cabe rawit dan
biarkan hingga bumbu meresap dan

Ingredients:
2 sdm of tamarind paste mix with 50ml warm water
4 cloves shallots
4 cloves garlics
1 index finger size of turmeric atau 2 – 3 tbs ground turmeric
1 cm galangal or 1 tbs ground galangal
Few bird chillies if you like spicy
1 tsp toasted belacan / shrimp paste
1 lemon grass crushed
2 bay leaves
2 candle nuts
1200 cc boiled water
3 pcs good king fish steak
Few pieces of chopped pineapple
Sugar and salt for seasoning
How to make :
Make ground paste by pounding shallots, garlics, galangal, turmeric , candle nuts, shrimp paste and 1 bird chilli and set a side , meanwhile marinate the fish with bit of salt and juice of tamarind for minimum 15 minutes
Preparing the wok and start boil the water an add the pounded paste and pineapple and leave it to boil, add the fish and leave it till the fish half cook and seasoning with salt and sugar, and also add few whole bird chillies and leave the juice reducing a bit and serve while it hot!
